White Bean & Sausage Soup is loaded with celery, cabbage, tomatoes, hearty white beans, and sausage ~ it's one of our all-time favorite soups.
Temperatures may be starting to warm up a bit, but my tastebuds still turn to a bowl of warm and comforting soup for dinner. Though truth be told, I enjoy soup so much I would happily turn toward a bowl full even in the middle of summer.
Even if you have non-soup lovers in your home, grab some sausage and simmer up a big pot of this soup. Once they dig in, it may just become one of their favorites, too.
Fortunately I have indeed found at least two exceptions to their dislike of soup ~ two pots of soul-warming deliciousness that do not elicit their soup-discontent reaction. Hearty Kielbasa Potato Soup ... and this flavor-loaded White Bean & Sausage Soup.
This soup delivers a delicious combination of white beans, sausage {regular or turkey}, celery, tomatoes, and cabbage. It's loaded with flavor, and a high ratio of "stuff" to broth ~ which is why my crew likes it.
They gravitate to hearty, flavor-loaded soups that are not broth-y. If you'd like it with more broth than we do though, simply add a bit more chicken broth when preparing it. I'd recommend adding up to 3 more cups of broth, if desired.
White Bean & Sausage Soup also comes together fairly quickly enough to be a viable weeknight meal option. You simply cook up some sausage in a large saucepan or Dutch oven, and then saute a mixture of onion, celery, and cabbage in that same pot. Add chicken broth, tomatoes, and seasonings and simmer for a bit to let the flavors come together.
White Bean & Sausage Soup comes together fairly quickly enough to be a viable weeknight meal option.
Total cook & simmer time is about 45 minutes, with about 15 of those minutes being hands-on time.
Or, make the soup ahead of time and reheat it on the stove top or in the microwave for an even quicker weeknight meal. It reheats well.
A bowl full is just perfect served up with a big hunk of homemade cornbread for these still-cool late winter days we have coming up.
So even if you have non-soup lovers in your home, grab some sausage and simmer up a big pot of this White Bean & Sausage Soup.

White Bean & Sausage Soup
White Bean & Sausage Soup is loaded with celery, cabbage, tomatoes, hearty white beans, and sausage ~ it's one of our all-time favorite soups.

ingredients:
- olive oil
- 1 lb. sweet Italian sausage
- 1 large onion, chopped
- 3 celery ribs, chopped
- 4 c. chopped green cabbage
- 1 (14.5 oz.) canwhite beans, drained and rinsed
- 1 (15 oz.) can stewed tomatoes
- 3 (14.5 oz.) cans chicken broth
- 1 tsp. Italian seasoning
- 1 bay leaf
- 1/4 tsp. black pepper
instructions:
How to cook White Bean & Sausage Soup
- Heat a bit of olive oil in a large saucepan or Dutch oven over medium-low heat. Remove sausage from its casings; add to pot and cook until cooked through. Remove cooked sausage to a plate. Drain any drippings from the pot.
- Put a little more olive oil in the same pot. Over medium heat, stir in chopped onion, celery, and cabbage. Cook, stirring occasionally, until vegetables begin to soften, about 8-10 minutes.
- Add beans, chicken broth, and tomatoes to the pot. Bring to a boil and immediately lower the heat. Stir in Italian seasoning and bay leaf. Simmer, partially covered, for 30 minutes.
- Stir in sausage and black pepper; simmer for about 2 minutes to heat through.

Great idea on the white beans, Tracey! I couldn't think of anything good and had lots of other stuff going on this week, so I bailed on this challenge. Too bad I didn't think of white beans because I also have a great white bean soup recipe to share. Oh well! Your soup looks delicious!

ReplyDeleteMade this soup for dinner tonight. Delicious. I didn't have stewed tomatoes so I used diced and two cans of beans to make it a bit more hearty. With turkey sausage, this is very healthy!
ReplyDeleteI made this soup for dinner this week and it was so Good! I did make some changes. I didn't have any beans, so I used brown rice. I also used diced tomatoes and Hot Italian sausage. My husband liked it too and asked that I make this again! Thanks for sharing this recipe.
