See, I'm always looking for excuses to try out new recipes and
So I had mentioned this one evening when I was out with my friends for a glass of wine and they were asking me stuff about the blog. Well, these friends came up with a fabulous idea to help me with my "problem" ~ a tasting party!
So one afternoon, they all came over to hang out, enjoy some wine, taste a bunch of new stuff I'd been wanting to make for a while, and give me feedback.
We all thoroughly enjoyed the tasting party. And let me just tell you, we decided we had some definite winners on our hands!
One of the stars of the party? These scrumptious Cherry Chocolate Chip Cookies.
I'd had this cookie idea in mind for a while. And with my friend's love of chocolate covered cherries, I decided the tasting party was the perfect time to give them their first run.
If you can cover a cherry in chocolate and turn out a totally-tasty-treat, then why not put that flavor combination in a cookie, right?
So I started with good old tried-and-true Nestle Tollhouse chocolate chip cookie dough. Then I added in chopped maraschino cherries, a bit of the juice from the maraschino cherry jar, and a touch of almond extract.
The maraschino cherry juice and almond extract add an extra jolt of sweetness to the finished cookies, but it's not an overly sweet taste that totally takes over the cookies' flavor. It's a sweetness that compliments the chocolate chips and cookie dough well.

I chopped the maraschino cherries very coarsely, leaving the pieces rather on the large side. I wanted the cherry flavor to be prominent and decided biting into good-sized cherry pieces in each cookie would help achieve this goal.
Once the cherries are stirred in, it makes for one very pretty cookie dough, don't you think? I love the flecks of red of the chopped cherries and the just-a-teeny-tiny-hint-of-pink from the cherry juice.

Yes, this is one time that my taste-testing friends and I were happy with the recipe result on the first try.
Chocolate chip cookies studded with bright red maraschino cherries, and flavored with a hint of extra sweetness from almond extract, make for one very tasty cookie, indeed.
And there you have it ~ the wonderful flavors of chocolate covered cherries, in fun Cherry Chocolate Chip Cookie form.
They're total yum. Just ask my chocolate covered cherry-loving friend!

CHERRY CHOCOLATE CHIP COOKIES

ingredients:
- 2 1/4 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 c. butter, at room temperature
- 3/4 c. granulated sugar
- 3/4 c. brown sugar
- 2 eggs
- 1/2 tsp. vanilla extract
- 1/2 tsp. almond extract
- 2 tsp. maraschino cherry juice
- 3/4 c. coarsely chopped maraschino cherries
- 2 c. (12 oz. package) semi-sweet chocolate chips
instructions:
How to cook CHERRY CHOCOLATE CHIP COOKIES
- Combine flour, baking soda, and salt; set aside.
- In a large mixing bowl combine, butter, granulated sugar, brown sugar, vanilla extract, almond extract, and maraschino cherry juice (from the jar of maraschino cherries); beat until creamy, about 2 to 3 minutes. Beat in eggs.
- Gradually add the flour mixture; mix until combined. Stir in the chopped maraschino cherries and chocolate chips.
- Drop dough by rounded teaspoonful onto a cookie sheet. Bake at 375 degrees for 8 to 10 minutes. Remove pan from the oven and let the cookies stand on the pan for about a minute before removing to a cooling rack.

My husband loves chocolate covered cherries and rum chocolate covered cherries even more. I have some maraschino cherries maserating in rum to make him homemade rum chocolate covered cherries.
