You know, regular-old stuffed peppers are just not my thing.

When I was a kid, my Mom used to make the ones stuffed with rice and ground beef slathered in some kind of tomato sauce. And it was a flavor combination I just didn't like.

But when I came across the idea for Philly Cheese Steak Stuffed Peppers, I knew I had found some stuffed peppers I could get into.

I mean, seriously, stuffing the yummy flavors of a Philly Cheese Steak into a pepper and topping it with melty provolone cheese? It's genius, and I just had to give it a try. I'm happy to say, our family was certainly not disappointed.

The main components of a traditional Philly Cheese Steak sandwich are ribeye steak, cheese, onions, and a hoagie roll. In this stuffed pepper version, we forgo the bread and sub in green bell peppers instead, use deli roast beef in place of ribeye for ease of prep, and add in some sauteed mushrooms along with the traditional onions. A slice of melty provolone cheese deliciously tops it all off.

Philly Cheese Steak Stuffed Pepper Ingredients:

It takes just 6 ingredients (plus some salt and pepper) to make these tasty Philly Cheese Steak Stuffed Peppers. To whip up a pan, you'll need:

  • Green bell peppers - Serve as the pepper shell for stuffing. Red, yellow, or orange bell peppers can be used if you prefer.
  • A large onion - Sauteed in butter, it brings the traditional Philly Cheese Steak onion component to the filling.
  • Fresh button mushrooms - Sauteed sliced mushrooms add nice texture and flavor to the finished dish. Portobello mushrooms could be used instead.
  • Deli roast beef slices - Stands in as the steak element in the Philly Cheese "Steak" filling. Ask the deli for 4 slices of roast beef, and coarsely chop it at home to prepare the stuffed peppers' filling.
  • Provolone cheese - Provolone slices melted inside and on top of the stuffed peppers deliciously finish off the dish, providing the traditional cheese element of a Philly Cheese Steak.
  • Butter - A touch of butter is used for sauteing the onion and mushrooms.
  • Salt & pepper - Seasons and enhances the flavors of the dish.

How to Make Philly Cheese Steak Stuffed Peppers:

So just how do you make these tasty Philly Cheese Steak Stuffed Peppers? It's pretty easy, for sure.

To get started, first de-seed some green bell pepper halves and line the inside of them with provolone cheese slices.

Then saute sliced onions and fresh mushrooms in a bit of butter until they're soft.

Coarsely chop a few slices of deli roast beef and place it in the pan with the sauteed onions and mushrooms.

Give the roast beef and veggies and good stir until they're well combined. Then heap the roast beef mixture inside the prepared green pepper halves.

Really get those peppers as full as can be, heaping the filling up because the filling mixture will settle down quite a bit as the peppers bake.

Cover the top of each filled pepper half with another slice of provolone cheese.

Then pop the pan in the oven and bake it all up until the peppers are soft, and the cheese is all melted into a slightly browned, gooey mess on the top.

The green peppers will turn fork-tender when done. And then when combined with the onions, roast beef, and melty provolone, they'll give the taste of a warm cheesy Philly Cheese Steak in every bite.

Philly Cheese Steak Stuffed Peppers

ingredients:

  • 2 large green bell peppers
  • 1 large onion, sliced vertically
  • 8 oz. fresh button mushrooms, sliced
  • 4 slices deli roast beef, chopped
  • 8 slices provolone cheese
  • 2 T. butter
  • salt & pepper, to taste

instructions:

How to cook Philly Cheese Steak Stuffed Peppers

  1. Slice peppers in half lengthwise, remove seeds and ribs; place in a baking pan coated with non-stick cooking spray. 
  2. Line the inside of each pepper half with a slice of provolone cheese.
  3. Melt butter in a saute pan over medium heat. Add sliced onion to the pan and cook until tender, about 7 minutes. 
  4. Add the sliced mushrooms and cook for about 5 minutes more. 
  5. Add chopped roast beef and cook until heated through, about 1 minute. Season with salt and pepper, to taste.
  6. Divide the meat filling mixture evenly between the pepper halves, filling each pepper until heaping full. 
  7. Top each pepper half with a slice of provolone cheese.
  8. Bake at 350℉ for 40-45 minutes until peppers are tender, covering loosely with aluminum foil after the first 20 minutes of baking.
