Okay, so you may be thinking ... "Brussels sprouts in a salad? Really, in a salad?"
Oh, yes, in a salad.
And let me just tell you, this Brussels Sprouts Salad is sooooo good. It's one of our absolute favorites, and we have it at least once a week or so. Yes, it's truly that good.
The recipe that inspired this salad creation is from the cookbook Power Foods: 150 Delicious Recipes with the 38 Healthiest Ingredients by the editors of Whole Living Magazine. My best friend gave me this fabulous cookbook for Christmas {or my birthday, maybe?} one year.
The fabulous combination in this salad's dressing is amazing - and completely takes away any of that "harsh" flavor raw Brussels sprouts or kale can have.
And being the really sweet-and-cute friend that she is, she stuck little sticky notes with handwritten notes from her on some of the recipes so I'd find them as I read it. It was like finding little presents inside my present as I went along! It was so fun, and such a nice little surprise as I turned the pages.
As a sidenote, I read cookbooks like most people read novels - cover-to-cover, straight through, without missing a single word. So my friend knew for sure there was no way I'd miss one of her little notes!
I did change up the recipe quite a bit, though. While I did love the original, I jazzed it up with some additions ...
Like crumbled bacon and dried cranberries. Which made a great thing even better.
Then I changed up the proportions of the dressing to bring forward a different flavor. I wanted maple to be the predominant flavor - and adjusted the dressing to make that happen.
The fabulous combination of fresh lemon juice, maple syrup, and whole-grain mustard in this salad's dressing is amazing - and completely takes away any of that "harsh" flavor raw Brussels sprouts or kale can have. Gone. Completely.

Now I'll admit when I first saw this recipe, I was thinking like many of you probably are ... "Really, raw Brussels sprouts in a salad??"
But, seriously ... try it.
It may just become one of your favorites, too!

Shredded Brussels Sprouts Salad
Thinly sliced fresh Brussels sprouts and kale are dressed with a delicious maple vinaigrette in this Shredded Brussels Sprouts Salad. And it makes for one surprisingly fabulous salad, indeed!

ingredients:
- 12 to 16 oz. fresh Brussels Sprouts, very thinly sliced (about 4 to 5 cups)
- 2 large kale leaves, ribs removed, and finely chopped (about 2 to 3 c.)
- 1/2 c. dried cranberries, coarsely chopped
- 1/4 c. sunflower seeds
- 4 slices bacon, cooked and crumbled
- 1 T. extra virgin olive oil
- 1 T. pure maple syrup
- 1 1/2 T. fresh lemon juice
- 1/2 T. whole-grain mustard
- Pinch salt
instructions:
How to cook Shredded Brussels Sprouts Salad
- In a large salad bowl, combine sliced Brussels sprouts, chopped kale, dried cranberries, sunflower seeds, and crumbled bacon. Toss together.
- In a small bowl, combine olive oil, maple syrup, fresh lemon juice, mustard, and salt. Whisk with a fork until well mixed.
- Pour dressing over the Brussels sprouts mixture; toss to coat. Serve immediately.
TRACEY'S NOTES
- I recommend using fresh lemon juice and pure maple syrup in the dressing for the best flavor, without substitution.
- If preparing this salad in advance, keep the Brussels sprouts mixture and the dressing in separate bowls until serving time. Dress the salad just prior to serving.
- I've also made this with dried blueberries instead of dried cranberries. The dried blueberries were yummy, too.
- I tried making the dressing with honey instead of maple syrup (since we're beekeepers). While the honey version was good, it's better with maple syrup.
