Oh my, we have a new favorite sweet treat at our house. Can you guess what it is?
How about I give you some big old clues ... It's cold. It's super easy. It's super creamy and super delicious. And it only takes 3 ingredients to make. I
It's this 3-Ingredient Creamy Coconut Ice Cream! And I totally can't believe an ice cream this good can be whipped up without an ice cream machine. But it sure can.
Because seriously, folks, if you're a coconut fan, you will want to make this.

I actually created this ice cream kind of on a fluke.
I was in the kitchen doing a first run at developing ... at hubby's request ... a coconut pound cake recipe using cream of coconut. I didn't use the entire can of cream of coconut, and had set the remaining bit aside on the counter, not giving it much thought.
Then, having just read a blog post about making easy 2-ingredient ice cream with whipped cream and sweetened condensed milk, inspiration struck.
I thought, "If you can make ice cream with sweetened condensed milk, I wonder if you can make it with cream of coconut??"
So, I grabbed my little-bit-of-leftover cream of coconut and the tad of leftover whipping cream I had in the fridge ... and I always have coconut in my freezer ... and made a mini test batch of this ice cream.
I thought, "If you can make ice cream with sweetened condensed milk, I wonder if you can make it with cream of coconut??"
And it worked! Oh my, did it ever work.
It worked to create a super creamy, super tasty result that's full of fabulous coconut flavor. We love the little chewy bits of sweetened coconut, but if you'd rather have a completely smooth coconut ice cream, just leave that out. The cream of coconut will still give the fantastic coconut flavor on its own.
So if you've got a hankering for some creamy coconut ice cream, give this simple 3-ingredient method a try. You'll be amazed how easy it is to make ... with no machine needed!

3-Ingredient Creamy Coconut Ice Cream {No Machine Needed}
Amazingly delicious homemade creamy coconut ice cream, with just three simple ingredients and no machine needed!

ingredients:
- 1 c. (8 oz.) whipping cream or heavy cream
- 3/4 c. (6 oz.) cream of coconut *
- 1/2 c. sweetened flaked coconut
instructions:
How to cook 3-Ingredient Creamy Coconut Ice Cream {No Machine Needed}
- Chill a large mixing bowl and the beaters of an electric mixer (or whisk attachment of a stand mixer) in the refrigerator for about 15 minutes. Remove from the refrigerator and pour the whipping cream into the chilled bowl. Beat on high speed until stiff peaks form.
- Gently stir in the cream of coconut and sweetened flaked coconut.
- Spoon into a freezer safe container, cover, and freeze for about 4 hours or overnight.

DeleteA member of my family is allergic to dairy products and it isnt easy finding a non dairy product that tastes good and has a nice texture. This machine would give him the opportunity to prepare something that he would be able to enjoy. Rum raisin, butter pecan, and a deep chocolate would be top on his list.

ReplyDeleteI just bought sweetened condensed milk the other day out of curiosity, since I've seen all those no-churn ice cream recipes that use it. I love the idea of using cream of coconut though! I would undoubtedly add a chocolate drizzle on top, being the chocaholic that I am... you can never go wrong with chocolate and coconut!

ReplyDeleteNeither. The recipe calls for cream of coconut, which is the stuff you find in the drink mixers section of the grocery store, not coconut milk ... it's the thick, sweet coconut stuff you use to make Pina Coladas & other beverages.

ReplyDeleteIts good to prepare the recipes at home but how about getting the tasty coconut ice cream ready made. Last week I had Coconut Flavoured Ice Cream in Winnipeg made with Canadian milk. It was so yummmy. I never had such yummy ice cream in my lifetime. Go and have this ice cream for sure.
