I fully embrace fall.
I remember as a kid growing up in Vermont, I couldn't wait for the leaves to change color and start falling. My Dad would rake the leaves into huge piles ... and then my brother and I would run as fast as we could and jump in the pile, scattering them all over again like a big burst of fall leaf fireworks.
And Dad would rake them all up and ... let us do it again. And again. And again. He's a great Dad like that.
Now as a grown-up living in North Carolina, I always look forward to the beautiful fall weather. Truly, fall in Carolina just can't be beat.
And, of course, I can't wait each fall to get cooking with fall seasonal flavors ... pumpkin, apple, gingerbread, spice ... all those wonderfully warm and comforting flavors we think of that help us celebrate and enjoy the fall season.

Well guess what?
Yep, flavors like Pumpkin Spice, Spiced Latte, Eggnog Latte, Peppermint Mocha, and Dark Chocolate Fudge have arrived in stores. They're only available September through December so be sure to get them while you can.
Coffee-mate's not only delicious in your coffee, it's a wonderful addition to seasonally-inspired recipes, too. So when I got the opportunity to partner with Coffee-mate, I just had to create a recipe featuring one of their seasonal flavors.
Because, you know, creating and tweaking recipes is what I love to do.
And the flavor I chose to create with was my absolute favorite fall flavor ... PUMPKIN SPICE! {But you'd probably already figured that out from the title of the post, right?}
Now, follow my thinking on how I came up with my creation ~ Pumpkin Spice White Russians ...
Coffee-mate has been coffee’s perfect mate for over 50 years, right?
Kahlua is coffee liqueur, right?
So it stands to reason that Coffee-mate would be Kahlua's perfect mate, too.
A little sprinkling of pumpkin pie spice topped off this creation quite nicely.
And people drink pumpkin spice lattes ... coffee and cream and pumpkin ... right?
So why not pumpkin spice white Russians ... coffee liqueur and cream and pumpkin??
It made perfect sense in my mind.
And when I put everything together, it made perfect sense in the glass, too!
A little sprinkling of pumpkin pie spice topped off this creation quite nicely.
And now these Pumpkin Spice White Russians have made my list of things I can't wait for come fall time, too.

Pumpkin Spice White Russian
Add a fabulous seasonal twist to your cocktail line-up with this delicious Pumpkin Spice White Russian! It's just perfect for fall sipping.

ingredients:
For each cocktail:
- 4 T. Kahlua
- 3 T. Coffee-mate Pumpkin Spice liquid creamer
- 1 1/2 T. vanilla vodka
- 2 to 3 tsp. canned pumpkin puree
- Sprinkling of pumpkin pie spice
instructions:
How to cook Pumpkin Spice White Russian
- Combine Kahlua, Pumpkin Spice creamer, vodka, and pumpkin puree in a small cocktail glass; stir until well combined. Add ice.
- Sprinkle with pumpkin pie spice.
