When I think back to enjoying pancakes during my childhood, I remember my Mom standing at the stove, flipping pan after pan of them ... while the rest of us sat comfortably at the table devouring plateful after plateful of fluffy hot pancakes.
By the time Mom was done, so were we. And Mom ended up eating her pancakes at the table by herself.
Poor Mom.

I absolutely love that this baked version of pancakes takes away the need for someone to stay at the stove. And I also absolutely love that it's easy.
Because we all need a few easy recipes in our wheelhouse, don't you think?
I first fell in love with this recipe and pancake-making method about two years ago when we moved to our current house. While in the throes of unpacking and settling in, I had no choice but to rely on easy dishes.
Because while in the throes of unpacking from our big move, this is what my kitchen looked like for about two weeks. Heck ... it's what our whole house looked like for those couple of weeks!
Ugh, unpacking is so not fun.

And these fluffy Baked Blueberry Buttermilk Pancakes certainly qualify as an easy recipe.
With this pancake prep method, the batter is poured into a baking dish and cooked hands-off all at once. Which means no flipping involved.
And oh my goodness, baking up a big ol' pan is so much easier than standing at the stove.
Instead of the flipping, you simply cut these baked pancakes into squares to serve them up. Sure, they come out in a thicker piece than "regular" pan-cooked pancakes. But the flavor is spot-on the same.
With this pancake prep method, the batter is poured into a baking dish and cooked hands-off all at once. Which means no flipping involved.

Fluffy Baked Blueberry Buttermilk Pancakes
Love to find an easier way to serve up hot & delicious pancakes? ... This Fluffy Baked Blueberry Buttermilk Pancakes recipe is for you! Bake up a big pan of fluffy pancakes, no flipping required.
prep time: 10 Mcook time: 30 Mtotal time: 40 M
ingredients:
- 3 c. self-rising flour
- 2 1/2 c. buttermilk
- 2 eggs, lightly beaten
- 1 T. canola oil
- 1 1/2 c. fresh blueberries
instructions:
How to cook Fluffy Baked Blueberry Buttermilk Pancakes
- Place flour, buttermilk, eggs, and oil in a large mixing bowl. Stir until just combined {batter will be lumpy}.
- Gently fold in blueberries. {For visible berries on the top after baking, reserve a handful of blueberries and sprinkle them on top once the batter is in the pan.}
- Place batter in a 9x13" baking dish coated with non-stick cooking spray. Bake at 425 degrees for 25-32 minutes, until puffed up and light golden brown on top.
- Serve warm with maple syrup or cinnamon syrup.
TRACEY'S NOTES
- These reheat well. Simply heat cut squares in the microwave for about 20 to 30 seconds.

ReplyDeleteI suggest keeping a close eye on the baking time! I baked this today for my boys. I only let it cook for 20 mins at 400, not 425, and it was overcooked, and dry. I want to try again at only 15 mins.

ReplyDeleteThese were great! My husband is vegan, so I subbed the buttermilk for soy & the eggs for two flax eggs. Topped woth some brown sugar (cause it's Father's Day and we wanted to be fancy). Tossed in some fresh peaches & raspberries too. Oh, man! So tasty! And so much better than cooking pancakes for AN HOUR!

DeleteGreat recipe!!! I used 9x9 pan and baked for 25 minutes came out a little overbaked. Next time I will baked at 20 minutes. I w could like to bake it as chocolate pancake. Any adjustment? Thank you
ReplyDeleteThis baked pancake is excellent. I used a 9 x 13 inch glass baking dish so I baked at 400 degrees. I added 1 tsp of vanilla to the batter. I baked for 19 minutes then brushed melted butter on top of pancake and baked another 2 minutes. Since I used frozen blueberries, I tossed the berries with 1 tbsp flour to prevent them from sinking to the bottom of the pancake. I made this for a church breakfast and I had a few requests for the recipe. Thanks for a great recipe.
