Nothing says comfort like good old macaroni and cheese. It's my all-time absolute favorite comfort food dish, for sure.
Growing up, I loved when Mom would make a huge pan of her totally yummy baked macaroni and cheese, full of flavor and oozing with gooey melty cheese. She'd make a creamy white sauce on the stove, layer that up with macaroni and tons of shredded cheese, and then bake it all up until it was hot and bubbly.
It was a true labor of love, for sure.
Nothing says comfort like good old macaroni and cheese. It's my all-time absolute favorite comfort food dish, for sure.
But, you know ... when delicious creamy macaroni and cheese can be made in just 15 minutes on the stove top? That's even better!
And when it includes a tasty combination of 5 cheeses ... and bacon?? Oh my. Comfort food at its finest.

Truth be told, I'd like to work my way through cooking every recipe in the entire book. I think I'd be pleased with just about every one!
As for this dish, I absolutely love how creamy the 5-Cheese Stovetop Mac 'n' Cheese came out ...
But even better was the recommendation to add some "divine swine," to quote David, to the finished dish.
Oh, that little sprinkling of crisp bacon put this already-delicious dish over the top.
Divine, indeed.
I'm looking forward to trying out some of David's other recipes from the cookbook, and I think you'd look forward to them, too. Now pardon me ... I've got to get back to this yummy plateful of mac 'n cheese.

5-Cheese Stovetop Macaroni and Cheese
With five yummy cheeses and just fifteen minutes on the stove top, you've got scrumptiously creamy 5-Cheese Mac and Cheese.

ingredients:
- 3 T. unsalted butter
- 2 T. all-purpose flour
- 1 tsp. dry mustard
- 2 c. heavy cream, warmed
- 1 c. (4 oz.) shredded smoked Gouda
- 1/2 c. (2 oz.) shredded Gruyere
- 1/4 c. (1 oz.) shredded Asiago
- 1 c. (4 oz.) shredded yellow extra-sharp Cheddar
- 2 c. (8 oz.) shredded white sharp Cheddar
- 1 lb. gemelli or other pasta twists, cooked
- 1/2 c. sour cream
- 1 tsp. kosher salt
- 1/2 tsp. white pepper
- 4 slices bacon, cooked and crumbled (optional)
instructions:
How to cook 5-Cheese Stovetop Macaroni and Cheese
- Melt the butter in a Dutch oven over medium heat. Add the flour and mustard and stir with a wooden spoon or whisk until a thick paste forms, 2 to 3 minutes.
- Stir in the cream and bring mixture to a simmer, stirring until the sauce becomes thick.
- Add the Gouda, Gruyere, Asiago, yellow Cheddar, and white Cheddar, stirring the cheeses until melted and the sauce is smooth. Add the cooked pasta and stir well to combine.
- Stir in the sour cream, salt, and white pepper and cook until the ingredients are combined and hot, 2 to 3 minutes. {Crumble bacon on top, if using.} Serve immediately.
