Cheeseburger Macaroni Soup Ingredients:
This Cheeseburger Macaroni Soup recipe takes advantage of the convenience of Hamburger Helper® to whip up one quick, easy, and deliciously hearty soup. To prepare a pot full, you'll need:
- Hamburger Helper® mix for Cheeseburger Macaroni - A box of Hamburger Helper® Cheeseburger Macaroni serves as the soup's base, delivering up both the cheeseburger flavoring and macaroni elements of the soup. Either the regular, whole wheat, or double versions of Cheeseburger Macaroni work just fine.
- Ground beef - A pound of ground beef forms the "burger" part of this hearty cheeseburger soup.
- Onion - A diced medium-sized onion adds flavor to the soup.
- Canned diced tomatoes - A can of diced tomatoes + their juice adds richness and flavor to the soup's broth.
- Frozen mixed vegetables - Mixed veggies turn this soup into a complete one-pot meal. We like the texture of frozen mixed vegetables best, but canned mixed veggies can be substituted.
- Dried basil - Half a teaspoon of dried basil nicely seasons the soup. Use a little more or less, to taste, if you'd like.
- Salt & pepper - Enhances the flavors of the soup. Adjust the amounts, as needed, to suit your personal taste.
How to Make Cheeseburger Macaroni Soup:
To get a pot of this hearty Cheeseburger Macaroni Soup started, first brown some ground beef and chopped onion in a large pot or Dutch oven, and drain off the fat.
Stir in the sauce mix powder from a package of Hamburger Helper® Cheeseburger Macaroni, some water, a can of diced tomatoes with their liquid, a bit of dried basil, and some salt and pepper. Heat this mixture to boiling, stirring it constantly. Then reduce the heat and simmer it for about 10 minutes.
Stir in the Hamburger Helper® macaroni and thawed frozen mixed vegetables. Cover the soup and cook it, stirring occasionally, until the macaroni is cooked and tender, which will be about 10 to 15 minutes longer.
Then you're ready to serve up the comfort-food deliciousness! Loaded with ground beef, tender macaroni, vegetables, and tasty cheeseburger-flavored broth, Cheeseburger Macaroni Soup is one hearty and delicious one-pot meal, for sure.
Do note that as this soup sits, the macaroni absorbs more and more liquid. -- Leftovers taste fabulous, but the leftover soup will be thicker with much less liquid broth, and closer to the consistency of a stew.
