Happy 70th birthday to this guy! My Dad, that is ...
I wish I knew their secrets, because I swear ... I'm aging much more quickly then they are.
We celebrated Dad's birthday this past Sunday on Easter Sunday, complete with birthday cake and ice cream for Easter dinner dessert.
But we didn't have the typical birthday cake and ice cream...
No, Dad chose a gingerbread layer cake.
That's how things work in our family ... the birthday boy {or girl} gets to choose what they want for a cake. And for dinner, too. Though since it was Easter Sunday, Dad was hosed on that choice. He just had to go with the Easter dinner plans. But I don't think he was disappointed.
So, what flavor goes great with gingerbread cake?
This ice cream is incredibly easy, requiring just 3 ingredients.
Lemon, of course!
So my Mom called me and "ordered" {I'm her personal chef service, you see} lemon ice cream for Dad's birthday. She knows I always either have a recipe up my sleeve, or that I'll rise to the challenge of whatever she dreams up!
And this time, I had the perfect recipe up my sleeve ~ Limoncello Lemon Ice Cream.
After recently discovering the joys of Limoncello liquor {how did you all let me go so long without knowing how GREAT this stuff is??}, I had actually been working on finalizing this Limoncello Lemon Ice Cream recipe over the past few weeks. Perfect timing on Mom's part, don't you think?
So I immediately knew Limoncello Lemon Ice Cream was what I was going to make to celebrate Dad's extra-special day.
1. It's incredibly easy, requiring just 3 ingredients. It's one of those ice creams that starts with ... well, ... ice cream as a base. Vanilla ice cream, to be exact. Simply soften from-the-store vanilla ice cream, and stir in some Limoncello liquor and lemon curd. That's it! See, I told you ... incredibly easy.
It's so good, my brother passed on the gingerbread cake in favor of two bowls of Limoncello Ice Cream instead!
2. It's incredibly delicious. Like seriously, if you're a lemon lover, this stuff is for you. It's so good, my brother passed on the gingerbread cake in favor of two bowls of Limoncello Lemon Ice Cream instead!
And let me tell ya, the birthday boy was sure pleased with his birthday Limoncello Lemon Ice Cream, too.

3-Ingredient Limoncello Lemon Ice Cream
Incredibly easy Limoncello Lemon Ice Cream ~ made with just three simple ingredients that deliver up incredibly delicious lemony flavor!
prep time: 4 H & 10 Mcook time: total time: 4 H & 10 M
ingredients:
- 4 c. vanilla ice cream or frozen yogurt, softened
- 1/2 c. lemon curd {store-bought jarred or homemade lemon curd}
- 5 T. Limoncello lemon liquor
- 6 Nilla Wafer cookies, coarsely crushed {optional}
instructions:
How to cook 3-Ingredient Limoncello Lemon Ice Cream
- Whisk together lemon curd and Limoncello in a mixing bowl. Add softened ice cream and stir to blend.
- Cover and place in freezer; freeze for at least 4 hours.
- Serve topped with a sprinkling of crushed Nilla Wafers, if desired.

ReplyDeleteHi, Suzi! Any type of shortbread'ish or sugar cookie will work. Nilla Wafers are a crisp & crumbly wafer cooker here in the States. I've also crumbled store-bought shortbread cookies on top ... so anything like that is fine. It's really just to add a little crunch element to the dessert ... and is totally optional. Enjoy!

DeleteI’ve made this recipe 4-5 times and can’t begin to say how incredible the taste and texture are! Just lusciously creamy and couldn’t be easier! Today I increased the lemoncello and lemon curd by 1 1/2, and incorporated it into a full container of Dreyers Old fashioned Vanilla ice cream, Which holds 6 cups, instead of the 5 cups called for. I didn’t want to have one cup of ice cream leftover. I’m a trained chef but know the value of having easy special recipes in my repertoire, especially if I’ve spent a lot of time cooking dinner for company. I use a Kitchen Aid stand mixer with paddle to thoroughly incorporate the ingredients. Sometimes I’ll serve this with shortbread but today I picked up some Biscoff cookies. I prefer to serve the crumbs or whole cookies on the side. I don’t want to detract from the creamy almost gelato like texture! This is probably one of the best things I’ve ever gotten from Pinterest! I’ve got a big family and EVERYONE loves this! Thank you for sharing
