Now, I know the first day of Spring is "officially" in March, but in my mind, Spring starts on Easter. 

There's just something about donning a new outfit for church on Easter morning, getting together with family to celebrate the resurrection of Christ, enjoying the first-blooming trees and flowers, and seeing all the beautiful pastel-colored Easter eggs and decorations that just say to me, "Spring is here!"
You can easily change out the flavors just by mixing in a different extract once the meringue mixture is whipped.
And what better way to usher in and celebrate the arrival of Spring than with beautiful perfect-for-Spring pastel Meringue Cookies?  Well, how about with an annual family Easter egg hunt, too?

Despite the youngest of us being 15 years old, thanks to my Mom and Dad, we do an egg hunt in their yard every year.  Without fail.

Because in our family, we're all truly just big kids at heart ... Which is completely evident in these family photos from this year's Easter egg hunt event.

That's my Mom and Dad on the left ... at the top is me hiding eggs for the hunt ... and then my niece and nephew counting & inspecting their loot ... and the lower right is my husband Mark, who just so happened to be the finder of the hunt's extra-special golden egg.  As you can see, he's quite proud of himself!  

We had so much fun!

That's three generations of family girls in that sweet, sweet photo ... me and my Mom in the back, and my sister-in-law and niece in the front.  Love, love, love these ladies, and love this photo.

So with our Easter celebrations complete, Spring is "officially" here in my mind.  Which makes it a perfect time to enjoy these perfect-for-Spring pastel Meringue Cookies.

And one of the extra bonus perks of these pretty little cookies?

You can easily choose your color and your flavor! ... simply by changing out the coloring and flavoring extract you use.

Easy peasy!  I just love their flexibility.

I did a mix-and-match approach when I whipped up this batch of meringue cookies.

The pink are strawberry, flavored with strawberry extract.  The yellow? ~ coconut, made with coconut extract.  And the green are almond, with almond extract.  I've also given the extract amounts for vanilla and peppermint in the recipe below, too.

You can easily change out the flavors just by mixing in a different extract once the meringue mixture is whipped. 

Whip one batch of the meringue, divide it into three parts, and flavor each part differently to get a mix-and-match batch of meringue cookies.

Spring Pastel Meringue Cookies {Choose Your Flavor}

How to bake Spring Pastel Meringue Cookies {Choose Your Flavor}

  1. Place egg whites, cream of tartar, and flavoring extract in a large bowl. Beat at highest mixer speed until soft white peaks form, about 2 minutes. While continuing to beat at high speed, very slowly pour sugar in, a little bit at a time. Keep beating until stiff peaks form.
  2. Add 2 to 3 drops of food coloring in the color of your choice. Beat just a few turns of the beater to incorporate; finish mixing by hand until egg white mixture is a uniform color. If deeper color is desired, gently mix additional food coloring in by hand.
  3. Place egg white mixture in a piping bag fitted with a very large round or star tip. Pipe meringue dollops onto a parchment-lined cookie sheet. (NOTE:  I use a disposable piping bag fitted with an extra large round tip when piping the meringue.)
  4. Bake at 250 degrees for 40 minutes. Let stand on the cookie sheet until completely cooled.
  5. Store at room temperature in an airtight container.
*Suggested flavoring extract amounts for a few flavors:
  1. Vanilla extract: 1 tsp. vanilla extract
  2. Almond extract: 1/4 tsp. almond extract
  3. Strawberry extract: 1/2 tsp. strawberry extract
  4. Coconut extract: 1 tsp. coconut extract
  5. Peppermint extract: 1/8 tsp. peppermint extract
TRACEY'S NOTES:
  1. The yield of this recipe can vary greatly based on the size the cookies are piped.  Pipe smaller for more cookies; large-piped cookies will yield fewer total cookies.

    1. You can do it, Krista! The hardest thing for me about making meringue cookies is piping/shaping them ... I have to remind myself that the shape they are when they go in the oven is EXACTLY the shape they'll be when they come out. Unlike other cookies, they don't puff or spread and smooth out as they cook. So if don't like how I pipe one, I scoop it off the baking sheet and try again. :-)

  14. When you list the extract amounts is that amount if the entire batch is one flavor? I just don’t want to make it overpowering, I’m thinking I’d like to do 3 flavors... red, white, and green for a Christmas so I’m just trying to figure out how much extract.
