I try to eat lower-carb or no-carb throughout the day, limiting the bulk of my carb intake to around dinnertime only. With this low-carb during-the-day eating approach, I'm always striving to come up with new low-carb lunch choices that are quick, easy, and tasty.

My new favorite?

Low-Carb Smoked Turkey & Cucumber "Sandwiches" that use cucumber slices instead of bread! 

Filled with slices of smoked turkey, a spread of cream cheese or low-fat spreadable cheese, and seasoned simply with salt, pepper, and dill, these no-bread sandwiches are super easy to make and loaded with flavor.

To skip the bread, simply cut a cucumber the long way into planks to take the place of your typical sandwich bread. Cut horizontally into fairly thin slices, cucumber slices work perfectly for making sandwiches that are a lower carb option.

How To Make a Low-Carb No-Bread Smoked Turkey & Cucumber "Sandwich:"

Using cucumbers instead of bread, Low-Carb Smoked Turkey Cucumber "Sandwiches" are truly super easy to make.

Start by removing the ends from a cucumber and cutting it into 5-inch or 6-inch long pieces (or longer if you'd like longer "sandwiches"). Cut each cucumber piece horizontally into approximately 1/4-inch thick slices to form the sandwich "bread."

You'll want to choose a cucumber that's pretty wide to give the most "space" for making your bread-less cucumber sandwich.

Then spread one cucumber slice with a little cream cheese or some Laughing Cow spreadable cheese.

Sprinkle the cheese layer with a little fresh or dried dill, and pile on a couple slices of smoked turkey.  Top the turkey with another slice of cucumber, and give the top another little sprinkle of salt, pepper, and dill.

And that's all there is too it. -- You've built yourself one very tasty low-carb, bread-free sandwich!

Ingredients

  • a wide cucumber
  • spreadable cheese (such as cream cheese or Laughing Cow cheese wedges)
  • fresh or dried dill
  • sliced deli smoked turkey
  • salt & pepper

Instructions

  1. Remove ends of cucumber. Cut cucumber into 5-inch or 6-inch long pieces (or longer if you'd like longer "sandwiches"). Cut each cucumber piece horizontally into approximately 1/4-inch thick slices to form the sandwich "bread."
  2. For each "sandwich," lay out one cucumber slice and sprinkle with a bit of salt and pepper. Spread with cheese, sprinkle with dill, and lay on some smoked turkey.
  3. Top with another cucumber slice and sprinkle the top with additional salt, pepper, and dill.
  4. Enjoy!
TRACEY'S NOTES:
  1. The long, seedless English cucumbers you find wrapped in plastic wrap in the grocery store produce section work very well for these breadless sandwiches. However, any cucumber big enough to cut horizontally into wide planks will work just fine.
  2. We typically use reduced-fat Neufchatel cream cheese or Laughing Cow original Swiss spreadable cheese for the "sandwich" cheese spread.

  5. ...and everyone here thinks you’re eating low-cal by dropping the bread but then adding mega-fattening cream cheese? You’re better off using cottage cheese and adding thin sliced bread anyway.
