Can you ever have enough easy-and-quick-to-pull-together side dish recipes? I think not!  And being quick and easy is exactly what makes Creamy Ranch Cucumber Salad so wonderful.

This Creamy Ranch Cucumber Salad recipe was inspired by a very similar non-Ranch creamy cucumber salad with fresh herbs version my family enjoys. In fact, it's one of our favorite go-to ways to enjoy summer's garden-fresh cucumbers.

Tossed with prepared Ranch dressing and fresh herbs, Creamy Ranch Cucumber Salad is quick, easy to prepare, and kid-friendly too.

While that family-favorite cucumber salad isn't difficult to pull together, I wanted to create an even easier and quicker version. -- One that's super kid-friendly, too. And when we think of kids enjoying vegetables, we immediately think of Ranch dressing, right?

So we paired that ever-kid-popular dressing with thinly sliced cucumbers as the major components for this Creamy Ranch Cucumber Salad. And oh my, it's good! A sprinkling of chopped fresh dill and parsley adds just the right extra flavor and freshness to this simple side.

Quick. Easy. Tasty. And a hit with the young and not-so-young, too. -- Truly, it may just be the perfect easy summer side.

Creamy Ranch Cucumber Salad Ingredients:

I takes just 6 simple ingredients to whip up this quick Creamy Ranch Cucumber Salad. To prepare a platter, you'll need:

  • Cucumbers - Unpeeled, thinly sliced cucumbers are the base and main component of the salad. You'll need 2 large cucumbers, or about 4-5 cups sliced, for this recipe. If garden-fresh cucumbers are available to you, they're the best. Or, choose thin-skinned regular cucumbers or English cucumbers from the grocery store. -- If you can find the smaller Kirby or pickling cucumbers at your grocery store, grab those for their thin skin and nice flavor (though you'll need more than 2).

  • Red onion - Thinly sliced red onion slivers add both a pop of color and a pop of flavor to this simple salad. Sweet Vidalia onion tastes great, as well, and can be substituted.

  • Prepared Ranch dressing - Adds the creamy component to the salad. Choose your favorite bottled Ranch.

  • Fresh dill + fresh parsley - A sprinkling of chopped fresh dill and parsley adds just the right freshness and extra flavor to this simple side.

  • Salt - Enhances the flavor of the cucumbers. Just a small pinch will do.

How to Make Creamy Ranch Cucumber Salad:

Creamy Ranch Cucumber Salad truly couldn't be any easier to make.

To get started, simply thinly slice some unpeeled cucumbers and red onion. We like to leave the skin on the cucumbers for color, and slice the onion into slivers to contrast the cucumber slices' round shape.

Arrange the cucumber and onion slices on a platter, and drizzle with prepared Ranch dressing. Then sprinkle on a pinch of salt and some chopped fresh dill and parsley.

Easy-peasy!

Garnish the salad with some additional dill and parsley, if you'd like, and then serve it up immediately.

You can served Creamy Ranch Cucumber Salad arranged as it is on the platter, or toss it together just before serving. Either way, it's one very simple, very tasty, and kid-friendly summer side that's sure to please.

Ingredients

  • 2 large cucumbers, unpeeled & thinly sliced (about 4-5 c.)
  • 1/2 medium-sized red or Vidalia onion, thinly sliced in slivers
  • 1/4 c. prepared Ranch dressing
  • 1 T. finely chopped fresh dill
  • 1 T. chopped fresh parsley
  • pinch salt

Instructions

  1. Arrange sliced cucumbers and onions on a platter or toss together in a serving bowl. Sprinkle with chopped dill and parsley.
  2. Drizzle with Ranch dressing and sprinkle with salt.
  3. Garnish with additional dill and/or parsley, if desired. Serve immediately.
  4. Serve arranged as it is, or toss together just before serving.
