Remember those little shrimp cocktails you used to be able to buy in tiny
glass jars?
They were sold in the refrigerator or freezer sections, I
believe, and had a mixture of cocktail sauce and teeny-tiny whole shrimp, all ready to enjoy. All you had to do was simply pop the top off the jar and dig in with a spoon.
But in our family's case, these little shrimp cocktails were all ready to be
enjoyed as shrimp dip!
My Mom made the simplest and tastiest shrimp dip by mixing these little shrimp
cocktails with a block of cream cheese. And I loved it.
Mom's shrimp dip was just two
simple ingredients, but they combined to deliver up big flavor that I adored.
Believe me, I was always excited to see Mom pick up a pack of shrimp
cocktails at the grocery store, because I knew it meant a batch of her shrimp dip
was soon on the way.
And those little glass jars? -- I remember we always kept the little jars to use as juice glasses.
They were the perfect tiny size to serve up a spot of juice. We
must have had a dozen of these tiny glasses in our drinkware cupboard.
Sadly, these little glass-jar shrimp cocktails are no longer available.
But fortunately with just three simple ingredients, it's still easy to recreate the shrimp dip of my childhood memories.

Shrimp Cocktail Dip Ingredients:
So what are the 3 simple ingredients needed to whip up a tasty batch of Shrimp Cocktail Dip?
All you need is:
- Cream cheese - Serves as the base of this creamy dip. Use regular cream cheese for the best texture and consistency. Reduced-fat cream cheese can make this dip too thin and liquidy.
- Cocktail sauce - Bottled cocktail sauce brings tons of flavor to the dip. Use your favorite bottled cocktail sauce. We especially love Heinz Zesty Cocktail Sauce.
- Small shrimp - Purchase frozen cooked extra-small or small shrimp that have been peeled and deveined. Then simply thaw and coarsely chop to stir into the dip.
Making a bowl of Shrimp Cocktail Dip truly couldn't be any easier.
Simply mix together cream cheese and some prepared cocktail sauce. Then stir in coarsely chopped cooked shrimp -- and voila! -- a delicious bowl of dip is at your service.
A note about mixing this Shrimp Dip. -- Because there can be stubborn little lumps of cream cheese when mixing this dip together, it's tempting to want to use an electric mixer. But beware, using a mixer will make the dip super runny. Stick with a fork for the mixing.
Crackers, veggies, and pita chips are all great with this simple little dip. But I must admit, my absolute favorite dipper with it is potato chips. -- Big sturdy potato chips, able to stand up to the load of shrimp in every
bite.
So while I may not be able to get the little shrimp cocktail glasses I remember so well, this 3-ingredient Shrimp Cocktail Dip certainly lives up to the shrimp dip of my childhood memories.

Ingredients
- 1 (8 oz.) package cream cheese, at room temperature
- 1/2 c. bottled cocktail sauce
- 1 c. frozen cooked extra-small shrimp (peeled & deveined), thawed and well-drained
Instructions
- Place cream cheese in a bowl and cream with a fork. Add cocktail sauce and whisk with a fork until well combined and smooth.
- Coarsely chop shrimp, leaving some whole if desired. Fold into cream cheese mixture.
- Chill at least two hours to allow flavors to meld. Serve with potato chips, crackers, or vegetables for dipping.

ReplyDeleteWe made Shrimp Cocktail Dip for every party. Ours was 1 can Campbell's Cream of Shrimp soup, 1 pkg. of cream cheese, 1 pound cocktail shrimp, and curry spice to taste. Sometimes the Cream of Shrimp soup is hard to find. When it is, I will use your recipe. Thanks!

ReplyDeleteSome of my fondest memories with my mom was buying those little jars, mixing and eating that dip. The only difference from this recipe is that she always used a generous splash of Worcestershire sauce. Thank you for allowing me those memories.
