I swear I could eat pizza every single day, for every single meal and never get tired of it. Cold pizza for breakfast? ... don't even get me started ... it's my favorite.
As if shrimp and pesto together aren't yummy enough, sun-dried tomatoes are tossed in to make it even better.
Not only do I love pizza, I love making pizzas at home -- especially pizzas with fun and funky flavor combinations. Fortunately, my husband Mark is an all-to-willing participant in taste-testing my pizza adventures.
His absolute favorite? -- This Shrimp & Pesto Pizza, with sun-dried tomatoes.
As if shrimp and pesto together aren't yummy enough, sun-dried tomatoes are tossed in to make it even better. The combination of flavors is a truly amazing one we love.
Whenever I ask my husband what kind of pizza he'd like for dinner, this one is his answer. And I must say, the boy's got great taste!
To make preparation super easy, I use a prepared pizza dough ball. Pizza dough balls are available at most grocery stores, typically in the deli prepared foods area.
I was inspired to make Shrimp & Pesto Pizza with Sun-Dried Tomatoes as a riff on a pizza from one of my favorite local pizza joints.
Just roll out the pizza dough ball on a very lightly-floured surface, and transfer it to a baking sheet or preheated pizza stone. Don't worry too much about getting the dough rolled out into a perfect circle -- a rustic pizza shape is just fine.
Get a nice layer of mozzarella over the shrimp to help keep them nice and tender and moist when the pizza bakes.
Once the pizza is baked up and golden, get ready to enjoy the cheesy shrimp-and-pesto deliciousness. It's an amazing flavor combination!

Shrimp & Pesto Pizza with Sun-Dried Tomatoes

ingredients:
- 1 pizza dough ball{homemade or store-bought dough ball}
- About 1/4 c. prepared pesto
- 12 to 15 large uncooked shrimp {peeled and deveined}
- About 1/4 c. sun-dried tomatoes, drained and coarsely chopped
- 8 oz. (2 c.) shredded mozzarella
instructions:
How to cook Shrimp & Pesto Pizza with Sun-Dried Tomatoes
- Roll pizza dough out to desired size; place on preheated pizza stone or baking sheet.
- Spread pesto in a thin layer over the crust. Top with shrimp and sun-dried tomatoes, then sprinkle with cheese. Cover the shrimp and sun-dried tomatoes well with mozzarella to keep them nice and moist while baking.
- Bake at 400 degrees for about 20-25 minutes, or until cheese is bubbly and just beginning to brown.

This is one of my favorite pizza combos!! I'm like the lone gourmet pizza person in my house though...they all like plain cheese. Ugh. On a positive note, I get all of my leftovers!

ReplyDeleteThis looks GOOD. I want instant gratification to gnosh on it. I'd have to modify the pesto slightly (can't have pine nuts or pistachios), but easy enough. There's a place back near where I used to live that makes the best white pizza with shrimp and broccoli.
