I think since I write The Kitchen is My Playground, it's pretty apparent I love to cook. I started cooking with my Mom way back about the time I started to walk, pulling up a chair to stand on at the counter and being dubbed the resident stirrer. I think I was also dubbed the resident spoon licker, too ... a responsibility I loved and took very seriously.
I've carried that love of cooking instilled in me through my Mom throughout my entire life.
But you know what?
Even with that love of cooking, there are many times I just don't feel like putting much effort into preparing a meal. And I would venture a guess that I'm not alone in this. Right?
Enter recipes like this Roasted Shrimp & Broccoli Sheet Pan Supper. Sheet pan suppers are the oven-roasted sheet pan version of the one pot meal. With your main and side baked all in the same pan, they're an easy, versatile, and low-effort way to make dinner.
I fell in love with this dinner-prep method when I started making our family-favorite Balsamic Chicken Sheet Pan Supper. Since then, I've been playing with the method to create and try out new flavor combinations for this low-fuss way to make dinner.
For this shrimp and broccoli version, do a quick marinating of the shrimp in olive oil, salt, pepper, and lots of lemon zest. The lemon zest brings such a zip and freshness of flavor to the shrimp ... it may seem like a large amount of zest, but it's truly delicious, I swear.
While the shrimp marinates, season fresh broccoli florets with olive oil, salt, pepper, and a touch of ground cumin and chili powder. Spread them on a sheet pan and roast the florets for 10 minutes.
Once the broccoli florets have finished their initial roasting, add the marinated shrimp to the pan and bake for about 10 minutes more. Remove from the oven and give the whole pan a little squeeze of fresh lemon juice to top it all off.
The result?
Lemony roasted shrimp and broccoli goodness with an added richness of flavor from the touch of cumin and chili powder. All made with low-effort in a single pan ... making it a wonderful quick-and-easy dinner choice.
