I've made a lot of chicken salads y'all. And you know what? This Greek yogurt chicken salad may just be the best one yet.
Yes, it's that tasty. I'm happy to say it even got an enthusiastic "This is so good!" from our six-year-old daughter when she tried her first spoonful!
Loaded with the wonderful Fall flavors of apples and pecans, a bit of sweetness from red grapes, and the creaminess of Greek yogurt, this chicken salad packs a resounding flavor punch. Not to mention ...
I love that it's a bit more health-conscious than the typical mayonnaise-laden chicken salad ... and packs a little extra protein from the use of Greek yogurt.
The inspiration for this recipe came from two things ...
The first inspiration was our family's visit last weekend to an apple orchard. It was little Miss H.'s first time at an orchard, and as expected, she loved it. We weren't able to pick our own apples because of this year's smaller-than-usual apple crop in our area ... apparently, some spring storms damaged the blooms. But we were able to take a hay ride and pick our own pumpkin, which Miss H. adored.
And while we couldn't pick our own apples, we were able to buy some super-fresh, just-picked red beauties from the orchard stand.
Which then promptly ended up in this perfect-for-Fall Greek Yogurt Chicken Salad with Apples & Pecans.
This salad's second inspiration was the new Pepperidge Farm Harvest BlendsTM bread. Because shouldn't a sandwich made with a more health-conscious, whole-grain, harvest-inspired bread have a more health-conscious, harvest-inspired filling?
Well yes. Yes, it should.
I was fortunate to get to try out all three varieties of the new Harvest BlendsTM ... and I'm hooked. Being an only-whole-grain-bread family, Pepperidge Farm® Harvest BlendsTM will easily slide right into our bread line-up. While each variety is different in texture and flavor, they all have great fresh-baked taste. And they're all nice and hearty and filling!
I especially love the super soft texture of the Sprouted Grain, the crunchiness of the Seeded Grain, and the slight sweetness from molasses in the Ancient Grain.
So which did I pair with my Greek Yogurt Chicken Salad, you ask?
The Ancient Grain! The bread's subtle sweetness paired really well with the salad's tang from the Greek yogurt and sweetness from the pecans and fruit. But truly, I think any of the three varieties would make a fabulous sandwich.

Greek Yogurt Chicken Salad with Apples & Pecans
Grab those apples and pecans and whip up a tasty bowl of Greek Yogurt Chicken Salad with Apples & Pecans. It makes for one truly perfect sandwich!
prep time: 15 Mcook time: total time: 15 M
ingredients:
- 2 c. chopped cooked boneless, skinless chicken breast {about 2 or 3 chicken breasts}
- 2/3 c. plain Greek yogurt
- 1/3 c. finely chopped red onion
- 1 T. fresh lemon juice
- total of 1 c. fruit & nut add-ins: chopped apples, chopped pecans, & halved grapes {I use a mixture of all 3 ~ 1/3 c. apples, 1/3 c. pecans, and 1/3 c. grapes}
- 1/4 tsp. curry powder
- salt & pepper, to taste {I use 1/2 tsp. salt and 1/4 tsp. pepper}
instructions:
How to make Greek Yogurt Chicken Salad with Apples & Pecans
- Combine Greek yogurt, red onion, lemon juice, curry powder, salt, and pepper in a mixing bowl; stir to combine.
- Add chicken, tossing to coat. Stir in apples, pecans, and/or grapes.
- Chill for about 30 minutes before serving to allow flavors to meld.
TRACEY'S NOTES:
- A 5.3 oz. container of Greek yogurt is just shy of 2/3 cup. If you don't feel like buying 'the big' container of Greek yogurt, use a touch of mayonnaise to make up the difference to 2/3 cup.
