If you were to ask me what my favorites foods are, pasta dishes would absolutely be near the top of my list. And when it comes to pasta dishes? I love them mixed with just about anything. As I said, I've never met a pasta I didn't like.
Whether it's tossed in a very simple sauce (or just olive oil, for that matter) like in classic spaghetti and meatballs, layered up with meat and cheese in our family-favorite baked mostaccioli, or loaded up and tossed with lots of yummy stuff like in bacon cheeseburger mac, pasta just can't be beat in my book.
That's why, loaded up and tossed with yummy stuff like browned sausage, Parmesan cheese, onion, garlic, and a tomato-based wine and cream sauce, Pasta in Creamy Sausage Sauce is one of my absolute favorites. It's a truly fabulous go-to weeknight (or anytime!) meal.

- Butter & olive oil - A combination of both butter and olive oil in the pan creates more depth of flavor in the sauce than using just one of them alone.
- Onion & fresh garlic - These sauteed aromatics create a beautiful base of flavor for the dish.
- Italian sausage - Choose mild, hot, or sweet Italian sausage to suit your tastes. We like mild or sweet best in this dish.
- Dry white wine - Brings wonderful flavor to the pasta's sauce. We recommend choosing a dry white such as Pinot Grigio or Sauvignon Blanc.
- Diced tomatoes - A can of diced tomatoes with their juice conveniently bring the tomato element to the sauce.
- Heavy cream - Creates the creamy base of the sausage sauce. For the best result and flavor, we recommend sticking with heavy cream rather than substituting milk or half-and-half.
- Fresh parsley - A generous dose of chopped fresh parsley adds nice flavor and color to the finished dish.
- Rigatoni pasta - A thick ridged tube-shaped pasta, rigatoni is sturdy enough to stand up to and carry this dish's creamy sausage sauce. Penne can be substituted, if you'd like.
- Parmesan cheese - A sprinkling of grated or shredded Parmesan at the end of cooking adds a final hit of flavor to the dish.
How to Make Pasta in Creamy Sausage Sauce:
In addition to it's amazing flavor, it's great that Pasta in Creamy Sausage Sauce is also quick and easy to make, too.
To get the dish going, simply start by sauteing some onion, garlic, and Italian sausage. Choose either mild, hot, or sweet Italian sausage to fit your taste. -- We like mild or sweet the best in this dish.
Once the Italian sausage is cooked through, make a simple sauce by adding a good bit of dry white wine and a can of diced tomatoes, along with their juice. Let this simmer to meld the flavors and reduce down a bit, and then add a dose of heavy cream and a good handful of chopped fresh parsley.
Then simply toss the sausage sauce with cooked pasta, sprinkle with some Parmesan cheese, and dinner is served! And oh, what a flavorful dinner it is.

Pasta in Creamy Sausage Sauce

ingredients:
- 1 T. butter
- 1 T. olive oil
- 1 large onion, halved & thinly sliced in slivers
- 3 cloves garlic, minced
- 1 lb. Italian sausages (mild, hot, or sweet ~ your preference; we like mild or sweet best)
- 1 c. dry white wine (such as Pinot Grigio or Sauvignon Blanc)
- 1 (14.5 oz.) can diced tomatoes
- 1 c. heavy cream
- 6 T. chopped fresh parsley
- salt & pepper, to taste
- 1 lb. rigatoni or penne pasta, cooked according to package directions
- 1 c. grated or shredded Parmesan cheese
instructions:
How to cook Pasta in Creamy Sausage Sauce
- Place butter and olive oil in a skillet or saucepan over medium heat; heat until butter is melted. Add onion and garlic; saute about 5 minutes until tender.
- Remove sausage from casings and break into small pieces. Add to pan and cook until browned, about 10 minutes. Drain off grease.
- Add wine and diced tomatoes (with juice). Increase heat to medium-high and bring to a boil. Boil for 3 - 5 minutes.
- Add cream and return pot to a simmer. Reduce heat and simmer until sauce thickens some, about 10 minutes.
- Stir in about 4 tablespoons of the parsley and season with salt and pepper, to taste. Add cooked pasta and 1/2 cup of the Parmesan; toss to coat.
- Sprinkle with remaining parsley and Parmesan.

Holy poop! This is absolutely delicious. Wow. I used gluten free pasta but kept everything the same. This is a new family staple.
