snacking!
As a full-time blogger and Mom, I, like so many others, am always on the go
and pressed for time. It seems like between school schedules, activity
schedules, appointments, and general life maintenance, there's just not enough
time to go around.
And with a daughter with an apparent bottomless pit for a stomach? What little time does seem to be available gets crunched even more as I'm endlessly getting food together for her.
While I do a pretty good job focusing on wholesome snacks for our daughter's bottomless pit tummy, when it comes to me? Not so much. Doesn't that seem to always be the way? -- We do the right thing for our children, but then seem to neglect ourselves?
Pair this totally tasty Creamy Feta Dip with crisp cucumber slices or whole grain crackers for a more wholesome version of chips and dip.
Well, I've decided to focus (at least some) on healthier, more wholesome snacking for ME!
And this Creamy Feta Dip is a perfectly delicious way to do that. Loaded
with Greek yogurt, Feta, and fresh lemon, it's jam-packed with flavor. And
when paired with crisp cucumber slices or whole grain crackers? -- It's a satisfyingly-tasty more-wholesome version of chips and dip.
Ahhh, just what our healthier snacking goals need.

Creamy Feta Dip Ingredients:
It takes just 6 simple ingredients to pull together a bowl of Creamy
Feta Dip. To whip some up, you'll need:
- Feta cheese - The base and backbone of this creamy Feta dip. Choose the block-type Feta and crumble it yourself for the best creamy texture. But pre-crumbled Feta crumbles also work, if you'd prefer.
- Plain Greek yogurt - Brings the creaminess to the creamy Feta dip.
- Extra-virgin olive oil - Adds richness and subtle background flavor.
- Fresh lemon juice & zest - Enhances the creamy Feta's flavors and makes them pop, creating a fresh and subtle lemony taste.
- Dill - Dried dill adds nice flavor. Use fresh dill instead, if you prefer.
- Black pepper - Seasons and enhances the creamy Feta's flavor.

- 2 tsp. extra-virgin olive oil
- 1 T. fresh lemon juice
- 1 tsp. finely minced lemon zest
- 1/4 tsp. dried dill weed
- pinch black pepper
Instructions
- Using your fingers, crumble feta into small chunks. Place in a bowl. Add Greek yogurt and olive oil; stir to combine.
- Add lemon juice, lemon zest, dill, and pepper. Stir until well combined.
- Refrigerate for at least an hour to allow flavors to meld. Serve with whole grain crackers and/or veggies for dipping.
TRACEY'S NOTES:
- We highly recommend using block-form Feta for this recipe and crumbling it yourself, rather than using pre-crumbled Feta crumbles. The block Feta has more moisture than the crumbles, and creates a creamier dip. Pre-crumbled Feta will certainly work, though, if you'd prefer.
- Add 2 - 3 tablespoons more Greek yogurt, if needed, to create a creamier consistency.
A healthy dip to go with a healthy cracker. Thanks for the simple recipe
ReplyDeleteI had a feta dip recipe a long time ago that I absolutely loved and it got lost. This looks like an even better version with the greek yogurt! Pinned for later, Thanks!
ReplyDeleteCan you use sour cream instead of yogurt?
ReplyDeleteYes you can; it will not be quite as thick and the taste will be a little different. We hope you enjoy.
